Sephardic Harosets  

From Mercedes Gellman

Ingredients:
400 grs (14oz) of pitted dates, chopped or 200 grs (7oz) of dates plus 200 grs (7oz) of raisins both chopped
1 ½ cups of water
3 TBS of red concord sweet Kosher wine
1 tsp. of cinnamon
1 cup of a mixture of walnuts and almonds finely chopped

Place the dates (or dates plus raisins) in a saucepan with the water, cook over a simmer for an hour until it looks like a paste. Place in food processor and chopped a bit more. Add the wine, cinnamon and nuts. Mix well and keep in the refrigerator for up to 2 weeks. Take it out of the fridge some time before serving.
